Wild Boar stew
with artichokes
1 cup oil
2 tbs. butter
1 lb. wild boar cubes
1 cup ketchup or chili sauce
1 leek sliced
2 carrots cut in slices
3 cups stock or broth
2 cups potatoes cut in pieces
1 bay leaf1 tbs. dried thyme
12 artichoke hearts cut in two
1 diced tomato1 bay leaf

salt and freshly ground black pepper
Cooking Method
1. In a saucepan, heat oil, melt butter, Brown cubes on all sides
2. Add vevetables, continue cooking 3 to 4 minutes.
3. Add stock or broth, potatoes, bay leaf and thyme, Season to taste and cook on low heat, covered 15 to 20 minutes or until cubes are tender.
4. Add artchoke hearts and continue cooking another 10 minutes.
5. Add diced tomatoes, season to taste and serve immediately with fresh bread.

Wild Boar kebabs
with garlic and herbs
3 garlic cloves, chopped
2 or 3 springs of rosemary, chopped
2 tbs. fresh thyme, chopped
1/2 cup oil
1 lemon
freshly ground black pepper
1lb. bison or wild boar cubes
Cooking Method
1. Mix all the ingredients
for the marinade.
2. Thread meat on skewers and marinate for at least 30 minutes but not more than 6 hours. Drain
3. Cook on a very hot grill until done to your liking.
4. Serve with tzatziki sauce, pita bread and Greek salad.
